1 can black beans, rinsed and drained
1 can Mexican corn, drained
1 can Rotel tomatoes, drained
2 tomatoes, diced
1 bunch scallions, diced
1-2 avocados, diced
1/2 cup cilantro
juice of one lime
3 Tbsp. olive oil

 

Combine all ingredients in a bowl and toss gently. Serve with tortilla scoops.
