Easy Roasted Cauliflower Soup (serves 6)

2   heads cauliflower, broken into florets; soak in salted water for 20 min., rinse and pat dry
Olive oil cooking spray
¼   cup olive oil
1   large onion, chopped
4   cloves garlic, chopped
6   cups water (or broth)
Salt and pepper to taste

Spread cauliflower evenly on lined baking sheet, salt, spray with cooking spray. Broil in preheated oven until brown (20-30 min.). Heat oil in soup pot on medium heat. Cook onions until translucent. Stir in cauliflower and chopped garlic. Add water, salt, pepper and simmer until vegetables are tender (about 30 min.). Puree until smooth. Serve.
