2       oz. light rum of your choice
1       oz. simple syrup*
¾       oz. lime juice
1       oz. soda water
8-10 mint leaves

In a pilsner glass, gently muddle the mint leaves in the simple syrup. Add the lime juice and rum, then stir to integrate. Add three cracked ice cubes and three whole ice cubes. Add the soda water and gently agitate with a bar spoon to integrate ingredients. Top the glass with a small mound of crushed ice. Garnish with a plume of mint and a straw (optional).

*To make your own simple syrup, combine one part water and one part granulated sugar (1:1). Be sure to heat the water first, before adding the sugar. Heating the sugar and water together won’t ruin the syrup — it just takes longer to heat. It’s not necessary to bring the water to a boil. Once the sugar is dissolved, let the syrup cool. Store it in a glass container in the refrigerator; it will keep for two to three weeks.
