Ingredients and mixing bowl for making oatmeal cookies

2   cups plain flour
1   tsp. cinnamon
½   tsp. salt
½   tsp. baking soda
½   cup sugar
1   cup brown sugar
2   large eggs (beaten)
1   cup butter
1   Tbsp. vanilla
2   Tbsp. honey
3   cups oats
1   cup (heaping) raisins or craisins
1   cup chopped pecans (optional)

Mix dry ingredients. Set aside. Cream butter, both sugars, eggs, vanilla, and honey. Add dry ingredients. Add oats, raisins, and pecans. Put in refrigerator for 30 minutes — no less, no more. Place by spoonful (flatten a little) on cookie sheet (can be lined with parchment paper if preferred). Bake at 350 degrees for 10-18 minutes, until lightly browned.
