Cinnamon Apple Nut Salad

Granny Smith apples and cinnamon

3          medium red apples, chopped

3          medium Granny Smith apples, chopped

½         cup dried cranberries

1          cup chopped pecans, toasted

¼         cup plus 1½ tsp. mayonnaise

3          Tbsp. cider vinegar

3          Tbsp. honey

1          Tbsp. plus 1½ tsp. orange juice

1          Tbsp. grated orange peel

¾         tsp. ground cinnamon

In a large bowl, combine the apples, pecans and cranberries. In a small bowl, whisk the remaining ingredients until blended. Pour over apple mixture; toss to coat. Refrigerate for 1 hour before serving. Yield: 12 servings.
