4 English Muffins, slit & toasted
8 eggs poached
8 slices Canadian bacon rounds
1 cup mayo
1 cup + 2 tbsp sour cream
2 Tbsp. lemon juice
1 Tbsp. yellow mustard

Preheat oven to 375 degrees. To poach eggs: place eggs in a lightly sprayed muffin tin and bake for 10 minutes. To cook Canadian bacon: heat in microwave for 10 seconds. Making the “hollandaise” sauce: combine mayo, sour cream, lemon juice, and yellow mustard (sauce should be pale yellow; not too tart). Assemble toasted muffin halves on plate, top with a slice of Canadian bacon and an egg on each muffin half and spoon warmed “hollandaise” sauce over each one and sprinkle with black pepper.
