1 Tbsp. oil

1 medium onion, chopped

6 eggs

½ tsp. salt

½ tsp. baking powder

¾ cup almond milk

3 handfuls spinach, chopped

5-10 pieces asparagus

3 Tbsp. flour

½ tsp. paprika

pepper to taste

Heat oil on medium heat in pan. Sauté onion and vegetables. In a bowl, combine eggs, baking powder, flour, milk, salt, paprika and pepper. Whisk. Stir in vegetables and spinach. Bake 45 minutes at 350 degrees until toothpick comes out clean.
