As things start to heat up, you’re looking for ways to cool down – especially once you hit the tennis court. This spring, try out some of our favorite no-bake recipes submitted by ALTA members that are served cold for those days when the sweat won’t stop.

Raspberry and Spinach Salad

Fresh spinach, chopped

Fresh raspberries

Red onion, thinly sliced

Crumbled goat cheese

Marcona almonds, chopped

Raspberry vinaigrette


Sprinkle sliced red onion on chopped spinach. Add the raspberries, goat cheese crumbles and almonds. Drizzle over as much or as little of the vinaigrette as you choose.
