| 8 | oz. cream cheese |
| 3 | cups cheddar cheese, shredded (divided) |
| 1 | jar apricot preserves |
| 1 | cup green onions, diced |
| 1/2 | lb. bacon, crumbled |
| 1 | box Ritz crackers |
Combine cream cheese and 2 cups cheddar cheese in large bowl, mixing with hands. Create ball and flatten out on plate. Spread jar of apricot preserves over cheese. Sprinkle remaining cheddar cheese on top; add diced green onions and cooked bacon crumbles on top. Enjoy with Ritz crackers or your favorite chips.
