Cut one long, seedless cucumber in half the long way, and then thinly slice both halves.
In a separate bowl, mix:
1 Tbsp. soy sauce
1 Tbsp. apple cider vinegar
1 Tbsp. of sesame seed oil
A shake or two of black pepper, to your preference
1 clove of garlic, minced (optional)
Mix and drizzle over your sliced cucumber. Chill for a 30 mins (optional).
