2 ¼ cup coarsely chopped pitted dates
¾ cup puffed rice cereal
¾ cup smooth peanut butter
3 Tbsp. sesame seeds or crushed cereal
pinch of salt
Pulse first 3 ingredients, plus the salt, in food processor 10-20 times for one minute until the mixture is crumbly but can be pressed into a ball. With wet hands, take about 1 Tbsp. of mixture and press into a ball. Roll in toasted sesame seeds or crushed cereal. Place in storage container, which can be kept in the refrigerator.
